is a Mexican dish derived from the Aztec Empire of Mexico.  The word “Tamale” comes from an Aztec word that means, “wrapped food.” Tamale is a meat and spice mixture encased in masa, (ground corn) and wrapped in cornhusks. 

There’s record of the tamale from as early as 1612 from writings of Captain John Smith upon his arrival to the New World. 

The founder of The Tamale King, Mark Martinez, began experimenting with various tamale recipes years ago.  Over a two-year period he fine-tuned his special recipe for this favorite wrapped food.  Only the finest pork loin goes into making the tamales at The Tamale King.
